Low Calorie Hot Cocoa Cookies

These low calorie cookies are chewy and delicious, and just 34 calories per cookie!

Special Tip: I used low calorie marshmallows I found online (link attached below) but you can also make your own if you prefer. Here is my Low Calorie Marshmallow Recipe.

Ingredients

⅔ cup all-purpose flour (or Gluten Free Flour)
¼ cup unsweetened cocoa powder
⅔ cup Zero Calorie All-Natural Brown Sugar (light brown sugar)
½ teaspoon baking soda
⅛ teaspoon salt
¼ cup unsweetened apple sauce
1 teaspoon vanilla extract
2 tablespoons water
16 Low Calorie Marshmallows
2 tablespoons chopped chocolate chips optional

Instructions

Preheat oven to 325 degrees and line a baking sheet with parchment paper.
To a large bowl combine the flour, cocoa powder, sugar, baking soda and salt. Mix well.
In a separate bowl combine the apple sauce, vanilla extract and water. Whisk together.
Pour the wet ingredients into the dry ingredients and mix together until just combined.
Scoop out 16 cookie balls and place on the prepared baking sheet.
Wet your hands a little and then press the cookies down a bit to form cookie rounds.
Top each with a marshmallow and a sprinkle of chopped chocolate (if using).
Bake for 7 minutes, then remove from the oven and let cool completely on the baking sheet (they will continue to cook on the sheet while they cool.)
