Ingredients You’ll Need

  • 1 pound lean ground beef
  • 1 garlic clove
  • Taco Seasoning (see recipe card below)
  • 1 16-oz can low fat refried beans
  • Low Calorie High Protein Tortillas (or carb balance store-bought)
  • 5 corn tortillas
  • 1 cup shredded romaine lettuce (or iceberg)
  • 1 large tomato
  • ½ cup low fat cheddar cheese
  • 5 tablespoons greek yogurt (optional- tastes just like sour cream)

Healthy Double Decker Taco Meal Prep and Storage

Meal Prep: I recommend making the beef ahead of time, as well as the tortillas if you choose to make the ones provided. Of course I must mention, that there is a certain nostalgia in eating these cold the next day. So if that’s what you are going for, make the tacos, wrap in parchment paper and place in the fridge for lunch tomorrow.
Storage: The tacos will hold for 1-2 days in the fridge. But if you prep everything and add to separate containers, then these will hold for 5 days in the fridge.

I have to admit, I'm kind of geeking out on this recipe as it was my favorite as a teenager. Ok, now that I got that out of my system, yes this is a Taco Bell Copycat Recipe.
Their Double Decker Taco is 330 calories, these are just 186 calories and have more protein than Taco Bell's are!
Special Tip: If you want to boost the protein even more, I recommend adding 2 scoops Unflavored Protein Powder to the beans, along with 1-2 tablespoons water to thin the beans out (the protein powder will thicken them).

Ingredients
 
 

  • 1 pound lean ground beef
  • 1 garlic clove chopped
  • Taco Seasoning below
  • 1 16-oz can low fat refried beans
  • 5 Low Calorie High Protein Tortillas or carb balance store-bought
  • 5 corn tortillas
  • 1 cup shredded romaine lettuce or iceberg
  • 1 large tomato diced
  • ½ cup low fat cheddar cheese
  • 5 tablespoons greek yogurt optional- tastes just like sour cream

Homemade Taco Seasoning:

  • ½ tablespoon chili powder
  • ½ tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • teaspoon pepper

Instructions
 

  • Add ground beef to a pan, brown over medium heat.
  • Drain out any fat and discard, then add in Homemade Taco Seasoning and 1/4 cup water and mix together.
  • Lower the heat to medium-low and cook until the liquid is absorbed, about 5 minutes. Stir often to avoid burning.
  • Meanwhile, add the beans to a small pot, cover and heat over medium low, mixing often until warmed through.
  • To assemble, add the soft tortillas to a large cutting board, spread out.
  • Add beans to each of the tortillas, once all dispersed evenly, smear the beans towards the edges, leaving 1/4 inch on the edges bare.
  • Add a crunchy tortilla to one bean smeared tortilla, right in the middle, then fold the soft tortilla over the crunchy.
    (I like to do one side at a time, I place my thumb on the crunchy side and my thumb on the soft tortilla side and squeeze to stick well.)
    Once you have the hang of it, do this with all 5 tacos.
  • To each taco, add equal amounts of the beef, then the lettuce, tomato, cheese, and greek yogurt (if using).
  • Serve hot, or cold. However you enjoyed them back in the day.
