Healthy Buffalo Chicken Salad Meal Prep and Storage
Meal Prep:Β To meal prep a salad, add all the ingredients to individual meal prep containers, or family sized containers. Add the dressing to a separate container and do not add it until you are ready to serve.Β
Storage:Β Will hold in the fridge for 4-5 days, does not hold well in the freezer.Β
Serving:Β If you added the dressing and the salad gets soggy, add it to a sandwich wrap or large tortilla. Itβs a great way to salvage leftover soggy salad.Β

This Low Calorie Buffalo Chicken Salad is just 383 calories and has almost 50g of protein per serving!The sodium is a bit high, but you can easily reduce that by swapping out the garlic salt for garlic powder.Special Tip: The blue cheese dressing is a bit higher in calories than the ranch, so it will add about 25 calories per serving. I used the ranch recipe to figure out the nutrition.

Low Calorie Buffalo Sauce:
- 1 cup Franks RedHot sauce
- ΒΌ cup lemon juice
- 2 teaspoons garlic salt
- 2 teaspoons paprika
- 1 teaspoon cayenne
- 1 teaspoon pepper
Salad Ingredients:
- 2 chicken breasts
- Olive Oil Spray
- 4 cups romaine lettuce roughly chopped
- 1 cup red cabbage sliced
- ΒΌ red onion sliced
- 3 stalks celery sliced
- 1 cucumber sliced
- 1 pint cherry tomatoes halved
- β cup Low Calorie Ranch Dressing OR Low Calorie Blue Cheese
InstructionsΒ
- In a medium bowl, combine the buffalo sauce ingredients. Mix well.
- Add the chicken to a baking dish or large bowl and cover with 1/2 of the buffalo sauce, mix well to ensure all of the chicken is covered in sauce.
- Preheat a skillet or grill pan over medium heat, spray with olive oil.
- Add the chicken to the hot skillet, and cook for 8-12 minutes, flipping once, until the chicken is cooked through with no pink in the center.
- Move to a plate to cool while you assemble the salads.
- To 2 large bowls, or meal prep containers add the lettuce, cabbage, and onion. Give it a quick toss, then top each salad with celery, cucumbers, and cherry tomatoes.
- Slice the chicken breasts and place atop the salads.
- Drizzle the remaining of the buffalo sauce over the salads, and then add ranch or blue cheese dressing and serve.
