In a medium bowl, combine the buffalo sauce ingredients. Mix well.
Add the chicken to a baking dish or large bowl and cover with 1/2 of the buffalo sauce, mix well to ensure all of the chicken is covered in sauce.
Preheat a skillet or grill pan over medium heat, spray with olive oil.
Add the chicken to the hot skillet, and cook for 8-12 minutes, flipping once, until the chicken is cooked through with no pink in the center.
Move to a plate to cool while you assemble the salads.
