- Olive oil spray
- 1 small onion
- ½ teaspoon salt
- ¼ teaspoon pepper
- 3 cloves garlic
- 1 ¼ cup unsweetened almond milk
- 3 tablespoons cornstarch
- ½ cup Gruyere cheese
- ½ cup reduced-fat Swiss cheese
- 1 teaspoon Dijon mustard
- ½ cup white wine
- ¼ cup mozzarella (or more Gruyere or Swiss)
- 1 teaspoon thyme
- More salt and pepper for the top (optional)

Healthy Baked Fondue Meal Prep and Storage
Meal Prep: You can make the healthy recipe ahead of time and bake completely then cover and store for later. You can also store unbaked just cover well, and store for later.
Storage: Will hold for 6 days in the fridge baked, or 2 days unbaked. Or one month in the freezer (baked or unbaked).
Reheating: You can reheat (or if stored unbaked follow directions below to bake) in an oven at 200-250 degrees until warmed through.

Low Calorie Baked Fondue
Ingredients
- Olive oil spray
- 1 small onion minced
- ½ teaspoon salt
- ¼ teaspoon pepper
- 3 cloves garlic minced
- 1 ¼ cup unsweetened almond milk
- 3 tablespoons cornstarch
- ½ cup Gruyere cheese shredded
- ½ cup reduced-fat Swiss cheese shredded
- 1 teaspoon Dijon mustard
- ½ cup white wine
- ¼ cup mozzarella (or more Gruyere or Swiss)
- 1 teaspoon thyme
- More salt and pepper for the top (optional)
Instructions
- Heat a large saucepan over medium heat, and spray with olive oil.
- Add the onion, salt and pepper, and cook for 5 minutes until soft, add in the garlic, and cook an additional 1-2 minutes until fragrant.
- In a small bowl combine the almond milk and cornstarch and whisk together until there are no lumps.
- Slowly add the milk mixture to the onions whisking while you pour.
- Bring to a boil over medium-high heat, then lower to a simmer over medium-low heat and cook for 5-8 minutes until thick.
- Remove from the heat and add whisk in the dijon mustard and white wine. Then add in the Gruyere and then the Swiss slowly 1/4 cup at a time, mix well until the cheeses are melted and the sauce is thick.
- Move to an oven safe baking dish, top with mozzarella, thyme and if desired a sprinkling of salt and pepper.
- Turn the broiler on, and place the fondue dip to the oven, broil for 2-3 minutes until the topping is lightly browned.
- Serve hot with low calorie dipping items (see above).
