This Low Calorie Baked Fondue is just 102 calories per 1/2 cup... and if you have ever had fondue, 1/2 a cup is a very large serving!Above I have supplied you with lots of yummy items to dip into the low calorie fondue, including my Low Calorie Baguette!Special Tip: You can swap the white wine for veggie broth and add in an additional teaspoon of dijon mustard if you like. And feel free to get creative with the cheese. As long as the measurements are the same, any cheese will work in this.
Heat a large saucepan over medium heat, and spray with olive oil.
Add the onion, salt and pepper, and cook for 5 minutes until soft, add in the garlic, and cook an additional 1-2 minutes until fragrant.
In a small bowl combine the almond milk and cornstarch and whisk together until there are no lumps.
Slowly add the milk mixture to the onions whisking while you pour.
Bring to a boil over medium-high heat, then lower to a simmer over medium-low heat and cook for 5-8 minutes until thick.
Remove from the heat and add whisk in the dijon mustard and white wine. Then add in the Gruyere and then the Swiss slowly 1/4 cup at a time, mix well until the cheeses are melted and the sauce is thick.
Move to an oven safe baking dish, top with mozzarella, thyme and if desired a sprinkling of salt and pepper.
Turn the broiler on, and place the fondue dip to the oven, broil for 2-3 minutes until the topping is lightly browned.
Serve hot with low calorie dipping items (see above).
