If you want to make a vegetarian gravy simply swap out the broth for vegetable broth and skip the drippings from the pan.
You can make this gravy from chicken drippings, turkey drippings, or remove that entire step and just make it with the broth.

How to Make Low Calorie Gravy
Most gravy recipes use cornstarch for gravy thickening, and it is handy just incase this homemade gravy does not thicken enough for you. But this recipe will show you how to make gravy from flour (or gluten-free flour).
I start this healthy gravy by making a roux, and this is how to make gravy with flour. It’s a traditional method and yields the best flavor (plus no lumps!)
How to Make Healthy Gravy:
- Pour the drippings from the chicken or turkey pan into a degreasing cup and set aside. (This step is optional)
- Add butter (or fat from degreasing cup) to a large sauce pot and melt over medium heat. Add in the flour and whisk to create a roux. Mix until it browns.
- Add in the broth, and 1/4 to 1/2 cup drippings (optional) and cook until thick, about 10 minutes.
- Add in the Worcestershire sauce and pepper and mix well.
- Serve hot over chicken, turkey, mashed potatoes, etc.
