Healthy Cowboy Caviar

Ingredients You’ll Need:

  • 1 (15 oz.) can black beans
  • 1 (15 oz.) can northern white beans 
  • 2 roma tomatoes 
  • 1 jalapeño 
  • 2 cups corn (fresh or frozen)
  • 2 bell peppers
  • ½ red onion 
  • ¼ bunch cilantro leaves c
  • Low Calorie Chips (optional- for serving)

Ingredients
 
 

Cowboy Caviar Ingredients:

  • 1 (15 oz.) can black beans drained and rinsed
  • 1 (15 oz.) can northern white beans drained and rinsed
  • 2 roma tomatoes diced
  • 1 jalapeño seeded and finely diced
  • 2 cups corn fresh or frozen
  • 2 bell peppers seeded and finely diced
  • ½ red onion diced
  • ¼ bunch cilantro leaves chopped
  • Low Calorie Chips (optional- for serving)

Dressing Ingredients:

  • 2 limes juiced
  • ½ teaspoon chili powder
  • 1 teaspoon cumin
  • ½ tablespoon apple cider vinegar
  • ½ teaspoon All-Natural Zero Calorie Sugar or granulated sugar
  • ¼ teaspoon salt
  • teaspoon pepper

Instructions
 

  • To a large bowl combine the beans, tomatoes, jalapeño, corn, bell peppers, red onion, and cilantro.
  • In a separate medium bowl combine the dressing ingredients and whisk well to combine.
  • Pour the dressing over the cowboy caviar and mix well so that everything is coated in dressing.
  • Serve with chips at room temperature, or cold.
