These Low Calorie Chicken Lettuce Wraps are just 267 calories for 1/4 of the recipe (about 8 chicken lettuce wraps) and each serving is packed with 23.3g of protein!
If you can't have or don't like cashews, you can swap them for peanuts, or for an 8-ounce can of chopped water chestnuts (drained).
Special Tip: If you have leftovers, and just tiny leaves left. Cut up the remaining lettuce, and toss leftover (cold or hot) filling and the leaves together for a quick leftover salad (it's amazing with a little sriracha!)

Ingredients
 
 

Low Calorie Chicken Lettuce Wraps:

  • Olive oil spray
  • 1 pound ground chicken
  • 1 yellow onion chopped
  • ¼ cup chopped cashews
  • 2 green onions sliced
  • 1 head butter lettuce

Healthy Chicken Lettuce Wrap Sauce:

  • 1 teaspoon fresh ginger minced or grated
  • 3 garlic cloves minced
  • ½ teaspoon miso paste
  • 2 tablespoons reduced sodium soy sauce or Tamari
  • ½ tablespoon peanut butter
  • 1 teaspoon honey
  • 1 tablespoon rice wine vinegar
  • ½ teaspoon sesame oil
  • ¼ teaspoon red pepper flakes
  • teaspoon pepper

Instructions
 

  • Heat a large skillet over medium-high heat, spray witty olive oil.
  • Add the chicken to the skillet and cook 5 minutes, crumbling and mixing as it cooks.
  • Add in the onion and cook for an additional 5 minutes.
  • Meanwhile, add the sauce ingredients to a medium bowl and mix well.
  • Pour the sauce over the chicken, and mix well to combine.
  • Cook until the chicken is cooked through and the sauce is absorbed (about 5 minutes).
  • Add in the cashews and mix well.
  • Remove from the heat and top with green onions.
  • Serve in butter lettuce leaves.
