Healthy Breakfast Quiche Meal Prep and Storage
Meal Prep: You can easily meal prep this recipe. Cook and cool completely, then cut into individual portions and add to meal prep containers. Cover and place in your fridge.
Storage: Will hold in the fridge for 6 days and in the freezer for a month.
Reheating: You can microwave the quiche for 1-2 minutes.

Low Calorie Breakfast Quiche
Ingredients
- Olive oil spray
- 2 cups baby spinach
- 6 eggs
- ½ cup unsweetened almond milk
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- ¼ cup Sun Dried Tomatoes chopped
- 1 9-inch pie crust
- ⅓ cup feta cheese
Instructions
- Preheat oven to 400 degrees. (If the pie crust needs to be pre-baked, complete as well)
- Heat a large skillet over medium high heat. Spray with olive oil and add the spinach. Cook until wilted (about 3 minutes).
- Meanwhile, to a large bowl add eggs, almond milk, salt and pepper. Whisk well.
- Add the wilted spinach, sun dried tomatoes, and 1/2 of the cheese to the pie crust.
- Pour over the egg mixture, and sprinkle the top with the remaining cheese.
- Add to the hot oven and bake for 20-25 minutes until crust is golden brown and the eggs are set.
- Remove from the oven and let sit for 10 minutes before slicing.
