  • 2 cups sliced cucumbers (about 1 large cucumber)

More Protein Options: If you don’t like eggs or cottage cheese, either or both can be swapped out for yogurt, string cheese, or more nuts.

Meal Prep

  1. Prep – Assemble the meal prep snack boxes as directed.
  2. Cover – Cover with a lid.

Snack Boxes:

  • 4 hardboiled eggs (halved)
  • Salt and Pepper (to taste)
  • 40 almonds
  • 1 cup berries (your favorite, or a mix)
  • 1 cup low fat cottage cheese
  • 2 cups sliced cucumbers (about 1 large cucumber)

Optional Toppings for Cottage Cheese:

Instructions
 

  • Lay your meal prep containers out in a line.
  • Add one hardboiled egg to each container, sprinkle each with salt and pepper.
  • Next, divide the almonds and berries between the containers.
  • Add 1/4 cup of cottage cheese to four 1/4 cup containers and add each to the meal prep box.
  • Finally, divide the cucumbers between the meal prep containers, and store in the fridge for up to 5 days.
