- 4 hardboiled eggs

- 2 cups sliced cucumbers (about 1 large cucumber)
More Protein Options: If you don’t like eggs or cottage cheese, either or both can be swapped out for yogurt, string cheese, or more nuts.

Meal Prep
- Prep – Assemble the meal prep snack boxes as directed.
- Cover – Cover with a lid.
- Refrigerate – Will hold for 5 days in the fridge. Does not freeze well.

Leftover Storage
- Individual Servings – Recover and add any leftovers to the fridge.

Ingredients
Snack Boxes:
- 4 hardboiled eggs (halved)
- Salt and Pepper (to taste)
- 40 almonds
- 1 cup berries (your favorite, or a mix)
- 1 cup low fat cottage cheese
- 2 cups sliced cucumbers (about 1 large cucumber)
Optional Toppings for Cottage Cheese:
- 4 teaspoons Everything Bagel Seasoning
- 4 teaspoons chopped chives
- 1 tablespoon Ranch Seasoning mix it in before dividing the cottage cheese up
Instructions
- Lay your meal prep containers out in a line.
- Add one hardboiled egg to each container, sprinkle each with salt and pepper.
- Next, divide the almonds and berries between the containers.
- Add 1/4 cup of cottage cheese to four 1/4 cup containers and add each to the meal prep box.
- Finally, divide the cucumbers between the meal prep containers, and store in the fridge for up to 5 days.
