  • 8 red bell peppers roughly chopped
  • 1 cup Low Calorie Enchilada Sauce or store-bought
  • 4 cups broth vegetable or chicken
  • Salt and Pepper optional and to taste

Optional Weight Loss Boosters:

  • 1-2 jalapeƱos chopped
  • 1 onion chopped
  • 2-3 garlic cloves chopped
  • Ā¼ avocado (for topping the soup with)
  • 2 tablespoons Apple Cider Vinegar (mix in just before serving)

Instructions
Ā 

  • To a large pot, add the bell peppers and enchilada sauce. (Plus any optional add ins)
  • Cover and cook over medium heat, mixing often, until the bell peppers are softened (about 5 minutes).
  • Add the broth, mix well and cover again.
  • Cook for 20 minutes, until bubbling and hot.
  • Remove from heat and use an immersion blender to blend until smooth.
  • NOTE: Alternatively, you can let the soup cool, then move to a countertop blender (vent to avoid pressure building) and blend well. Then add back to the pot to reheat.
  • Serve hot.
