- 8 red bell peppers roughly chopped
- 1 cup Low Calorie Enchilada Sauce or store-bought
- 4 cups broth vegetable or chicken
- Salt and Pepper optional and to taste
Optional Weight Loss Boosters:
- 1-2 jalapeƱos chopped
- 1 onion chopped
- 2-3 garlic cloves chopped
- Ā¼ avocado (for topping the soup with)
- 2 tablespoons Apple Cider Vinegar (mix in just before serving)
InstructionsĀ
- To a large pot, add the bell peppers and enchilada sauce. (Plus any optional add ins)
- Cover and cook over medium heat, mixing often, until the bell peppers are softened (about 5 minutes).
- Add the broth, mix well and cover again.
- Cook for 20 minutes, until bubbling and hot.
- Remove from heat and use an immersion blender to blend until smooth.
- NOTE: Alternatively, you can let the soup cool, then move to a countertop blender (vent to avoid pressure building) and blend well. Then add back to the pot to reheat.
- Serve hot.
