To a large pot, add the bell peppers and enchilada sauce. (Plus any optional add ins)
Cover and cook over medium heat, mixing often, until the bell peppers are softened (about 5 minutes).
Add the broth, mix well and cover again.
Cook for 20 minutes, until bubbling and hot.
Remove from heat and use an immersion blender to blend until smooth.
NOTE: Alternatively, you can let the soup cool, then move to a countertop blender (vent to avoid pressure building) and blend well. Then add back to the pot to reheat.
