Equipment
- 9×9 baking dish
- Small Bowl
- Measuring cups and spoons
Ingredients
- Olive oil Spray
- ½ tablespoon honey (or keto maple syrup to lower the sugar)
- ⅛ cup balsamic vinegar
- ½ tablespoon low sodium soy sauce (or Tamari for gluten-free)
- 2 cloves garlic minced
- ½ teaspoon pepper
- 2 boneless skinless chicken breasts
- 2 sliced mozzarella cheese
- 1 Roma tomato sliced
- 6 basil leaves
Instructions
- Preheat the oven to 425 degrees, and spray a 9×9 baking dish with olive oil.
- To a small bowl, combine the honey, balsamic vinegar, soy sauce, garlic and pepper. Mix well and set aside.
- One at a time, add a chicken breast to your cutting board. Using a sharp knife, slice horizontally into the thicker side of the breast and continue cutting to make a pocket inside. (If you place one hand on top of the chicken breast as you do this, it makes it easier.)
- Fill the chicken breast with tomato slices, cheese, and basil. Move to the baking dish, and then start working on the second chicken breast.
- Pour the balsamic glaze over the chicken breasts, and bake for 20-25 minutes until cooked through.
- Serve hot.
