  • 1 Sheet Pan OR 2 cookie sheets

Ingredients
 
 

Sheet Pan Dinner Ingredients:

  • 2 boneless skinless chicken breasts
  • 1 red onion sliced
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 2 carrots sliced
  • 1.5 cups broccoli florets
  • Olive oil spray

Sheet Pan Spice Blend:

  • ½ teaspoon garlic salt
  • 1 teaspoon paprika
  • ¼ teaspoon pepper
  • ¼ teaspoon chili powder
  • ¼ teaspoon cumin

Instructions
 

  • Preheat oven to 400 degrees.
  • To a small bowl combine the sheet pan spice blend, mix together and set aside.
  • Add the chicken breasts, onion, bell peppers, carrots and broccoli to a large sheet pan (or two small rimmed cookie sheets).
  • Spray with olive oil, and sprinkle with the spice blend.
  • Place in the oven and bake for 25-30 minutes until the chicken is cooked through with no pink in the center.
  • Slice the chicken breasts and serve hot.
