Meal Prep: This is a great meal prep dinner. Make ahead of time, cool and move to meal prep containers. Then pop in the freezer or fridge.
Storage: Will hold in the fridge for 5 days and the freezer for a month.
Reheating: Reheat in the microwave for 2-3 minutes, or in a 350 degree oven until warm, about 20 minutes.

- 1 Sheet Pan OR 2 cookie sheets
Ingredients
Sheet Pan Dinner Ingredients:
- 2 boneless skinless chicken breasts
- 1 red onion sliced
- 1 red bell pepper chopped
- 1 yellow bell pepper chopped
- 2 carrots sliced
- 1.5 cups broccoli florets
- Olive oil spray
Sheet Pan Spice Blend:
- ½ teaspoon garlic salt
- 1 teaspoon paprika
- ¼ teaspoon pepper
- ¼ teaspoon chili powder
- ¼ teaspoon cumin
Instructions
- Preheat oven to 400 degrees.
- To a small bowl combine the sheet pan spice blend, mix together and set aside.
- Add the chicken breasts, onion, bell peppers, carrots and broccoli to a large sheet pan (or two small rimmed cookie sheets).
- Spray with olive oil, and sprinkle with the spice blend.
- Place in the oven and bake for 25-30 minutes until the chicken is cooked through with no pink in the center.
- Slice the chicken breasts and serve hot.
