Meal Prep: You can easily meal prep these pumpkin waffles! Simply wrap individual portions in parchment paper, and stack in a gallon freezer bag or container.
Storage: Will hold in the fridge for 5 days and in the freezer for a month.
Reheating: You can add the wrapped servings to the microwave for 1-2 minutes. Or pop in a toaster/toaster oven for a couple minutes.

- ¾ cup pumpkin puree

- Pecans or favorite nuts
Instructions
- Preheat a waffle maker and spray with olive oil.
- To a large bowl combine the flour, baking powder, salt, sugar, and pumpkin pie spice. Mix together
- In a separate bowl whisk the eggs, and then add in the pumpkin puree, and almond milk, and mix together.
- Pour the wet ingredients into the dry ingredients and fold together.
- Use a 1/3 cup measuring cup to pour the waffle batter onto the prepared waffle maker.
- Close and cook until done, following the directions for your waffle maker.
- Remove the waffle and repeat with the second waffle, and so on.
- Add your favorite toppings and serve your waffles hot – if you like a crispy waffle, pop it in the toaster!
