  • 1 ½ cups flour all-purpose (or gluten free)
  • 1 teaspoon baking powder
  • ⅛ teaspoon salt
  • 2 tablespoons zero calorie all-natural brown sugar (see recipe card below)
  • ½ teaspoon pumpkin pie spice
  • 2 large eggs or vegan egg substitute
  • ¾ cup pumpkin puree
  • ⅛ cup almond milk
  • Olive oil spray

Healthy Pumpkin Waffles Meal Prep and Storage

Meal Prep: You can easily meal prep these pumpkin waffles! Simply wrap individual portions in parchment paper, and stack in a gallon freezer bag or container.
Storage: Will hold in the fridge for 5 days and in the freezer for a month.
Reheating: You can add the wrapped servings to the microwave for 1-2 minutes. Or pop in a toaster/toaster oven for a couple minutes.

  • 1 ½ cups flour all-purpose or gluten free
  • 1 teaspoon baking powder
  • teaspoon salt
  • 2 tablespoons zero calorie all-natural brown sugar
  • ½ teaspoon pumpkin pie spice
  • 2 large eggs or vegan egg substitute
  • ¾ cup pumpkin puree
  • cup almond milk
  • Olive oil spray

Optional Toppings:

Instructions
 

  • Preheat a waffle maker and spray with olive oil.
  • To a large bowl combine the flour, baking powder, salt, sugar, and pumpkin pie spice. Mix together
  • In a separate bowl whisk the eggs, and then add in the pumpkin puree, and almond milk, and mix together.
  • Pour the wet ingredients into the dry ingredients and fold together.
  • Use a 1/3 cup measuring cup to pour the waffle batter onto the prepared waffle maker.
  • Close and cook until done, following the directions for your waffle maker.
  • Remove the waffle and repeat with the second waffle, and so on.
  • Add your favorite toppings and serve your waffles hot – if you like a crispy waffle, pop it in the toaster!
