Instructions
Preheat a waffle maker and spray with olive oil.
To a large bowl combine the flour, baking powder, salt, sugar, and pumpkin pie spice. Mix together
In a separate bowl whisk the eggs, and then add in the pumpkin puree, and almond milk, and mix together.
Pour the wet ingredients into the dry ingredients and fold together.
Use a 1/3 cup measuring cup to pour the waffle batter onto the prepared waffle maker.
Close and cook until done, following the directions for your waffle maker.
Remove the waffle and repeat with the second waffle, and so on.
Add your favorite toppings and serve your waffles hot – if you like a crispy waffle, pop it in the toaster!
