This Low Calorie Protein Pumpkin Pudding is just 89 calories and is packed with over 10g of protein per serving!I used my favorite protein powder (and there is a link below!) which requires 2 scoops per serving. If you have a protein powder that is one scoop per serving, then you will want to use 1/2 a scoop. Special Tip: This is so great with chocolate chips in it, feel free to mix 1 teaspoon into each pudding!
Ingredients
- ½ cup 0% Greek yogurt
- ½ cup pumpkin puree
- 1 scoop vanilla protein powder or 1/2 serving
- 1 tablespoon water plus more if needed to thin
- 2 teaspoons vanilla extract
- 1 teaspoon keto maple syrup or real maple syrup
Instructions
- To a medium bowl, combine all ingredients.
- Whisk to combine until smooth and no clumps remain. Adding more water 1 teaspoon at a time to thin it as needed.
- Scoop into 3 bowls and add any desired toppings. Serve cold or cover and place in the fridge to serve later.
