Meal Prep: You can make the egg roll bowls ahead of time, just add individual servings to meal prep containers and cover. Place in the fridge for later.

Ingredients
 
 

  • 1 pound ground chicken
  • 2 green onions thinly sliced
  • 2 teaspoons grated fresh ginger
  • 4 cloves garlic minced
  • 4 cups shredded cabbage
  • 2 large carrots shredded
  • 3 tablespoons reduced sodium soy sauce
  • ½ teaspoon sesame oil

Instructions
 

  • Heat a large skillet over medium-high heat, add in the ground chicken. Break it up with a wooden spoon. When browned and crumbled, drain any fat and start adding the remaining ingredients.
  • To the chicken, add the green onions, ginger, garlic, cabbage and carrots. Cook, stirring occasionally, until the cabbage is tender, about 5 minutes.
  • Stir in soy sauce and sesame oil and cook for 1 minute.
  • Serve hot.
