Ingredients

- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Heat a large pan over medium-high heat, spray with olive oil.
- One at a time, add a chicken breast to your cutting board. Using a sharp knife, slice horizontally into the thicker side of the breast and continue cutting to make a pocket inside. (If you place one hand on top of the chicken breast as you do this, it makes it easier.)
- Fill the chicken breast with the brie cheese, and the cranberries. Drizzle with honey and close the chicken breasts.
- Place the chicken breasts in a single layer in the hot pan.
- Cook for 5-6 minutes per side, or until browned and cooked through.
- Move to a plate to rest for 5 minutes.
- Serve hot.
