I like to use unsweetened almond milk to make this low calorie creamed spinach recipe. But any unsweetened milk will work, including cow’s milk. So use what you have on hand.

How to Make Low Calorie Creamed Spinach
If you prefer to use frozen spinach that will work as well. You will want to defrost and drain it first however. Just one extra step, but great for those who keep lots of frozen veggies on hand.
How to Make Low Calorie Creamed Spinach:
- Heat a large sauté pan over medium heat, and spray with olive oil.
- Add the shallots and cook for 5 minutes
- Add the garlic and cook for an additional 1-2 minutes until fragrant.
- Sprinkle the flour over the shallots and mix well.
- Reduce the heat to low and slowly add almond milk, whisking well as you pour.
- Add the parmesan cheese, salt and pepper and mix well.
- Add the spinach and mix well to combine with the sauce, cook 5 minutes until wilted and cooked though.
- Serve hot.
