  • 3 cups of fresh spinach

Meal Prep: This is a great meal prep recipe! You will want to chill the dish. You can make it a day or two before you plan on serving. Then store in an airtight container in the fridge.

This Healthy Creamed Spinach recipe is just 64 calories per serving (1/2 cup) and is packed with flavor and good for you ingredients!
If you can't find shallots, 1/4 red onion is a good replacement, you can also use 4 green onions instead.
Special Tip: The longer you cook the low calorie creamed spinach, the more the liquid will evaporate. So if the spinach is too watery, cook it for 5 minutes more. If you like it with more liquid, cut the cook time by 2-3 minutes.

Ingredients
 
 

  • Olive oil spray
  • 2 shallots minced
  • 2 garlic cloves minced
  • 2 tablespoons all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 2 tablespoon parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 3 cups of fresh spinach chopped

Instructions
 

  • Heat a large sauté pan over medium heat, and spray with olive oil.
  • Add the shallots and cook for 5 minutes
  • Add the garlic and cook for an additional 1-2 minutes until fragrant.
  • Sprinkle the flour over the shallots and mix well.
  • Reduce the heat to low and slowly add almond milk, whisking well as you pour.
  • Add the parmesan cheese, salt and pepper and mix well.
  • Add the spinach and mix well to combine with the sauce, cook 5 minutes until wilted and cooked though.
  • Serve hot.
