How to Make Meal Prep Chicken and Rice Bowls

These easy meal prep greek chicken breast recipes can be made easily… and we will show you how to easily make lots of meal prep greek chicken with yogurt in no time.

As noted above, the recipes for greek rice can easily be made with cauliflower rice. This will also mean you can skip the cooking step, saving even more time.

How to Make Greek Chicken Salad Meal Prep Bowls:

Making the Greek Chicken:

  1. Sprinkle the garlic salt all over the chicken.
  2. Preheat a large skillet over medium heat and lightly spray with olive oil.
  3. Add the chicken to the hot skillet and cook for 5-8 minutes each side, until cooked though.
  4. Squeeze 1/2 lemon over the chicken, and move to a plate to cool, then chop.

Making the Greek Rice:

  1. In a small pot, or rice cooker, add rice and water.
  2. Bring to a boil on high heat. Lower heat to low, cover and cook until the water soaks into the rice, about 30 minutes. (Or follow rice cooker directions)
  3. Remove the pot from the heat and add the rice to a medium bowl. (If using Cauliflower rice, skip to this step)
  4. Add the garlic salt, dill and juice of 1/2 lemon to the bowl and toss together.

How to Make the Easy Tzatziki Sauce:

  1. Add the greek yogurt, dill, chopped cucumber, and garlic salt to a bowl.
  2. Mix well and set aside until you’re ready to put the easy chicken meal prep together.

Putting Meal Prep Lunches Together:

  1. Lay your meal prep containers out in a line.
  2. Divide the rice into each container.
  3. Then add the chicken to each container.
  4. Next add in the chicken.

Ingredients
  

Greek Chicken Meal Prep:

  • 1/4 teaspoon garlic salt
  • 2 boneless skinless chicken breasts cut into thin filets
  • Juice of 1/2 lemon
  • Olive oil spray

Rice Meal Prep:

  • 1/2 cup rice or 1.5 cups cauliflower rice
  • 1 cup water
  • 1/4 teaspoon garlic salt
  • 1/2 teaspoon dill
  • Juice of 1/2 lemon

Simple Tzatziki Sauce:

  • 1 cup 0% Greek Yogurt
  • 1 teaspoon dill
  • 1/3 English cucumber chopped
  • 1/4 teaspoon garlic salt

Greek Veggies for Meal Prep:

  • 2/3 large English cucumber chopped
  • 1 pint cherry tomatoes halved

Optional Toppings:

  • 3 tablespoon Kalamata olives
