Ingredients You’ll Need:

- 2 boneless skinless chicken breasts
- 1 lemon
- Olive oil spray
- ½ cup rice (or 1.5 cups cauliflower rice)
- ¼ teaspoon garlic salt
- 1.5 teaspoons dill
- 1 cup 0% Greek Yogurt
- 1 English cucumber
- 1 pint cherry tomatoes

Meal Prep
- Prep – Assemble the meal prep as directed.
- Cover – Cover with a lid.
- Refrigerate – Will hold for 5 days in the fridge. Does not freeze well.
- Eat – Dump into a large bowl or eat right out the the container.
Leftover Storage
- Individual Servings – Recover and add any leftovers to the fridge.
- Refrigerate – Will hold for 2-4 days if you’ve mixed it up.

Ingredients
Greek Chicken Meal Prep:
- ¼ teaspoon garlic salt
- 2 boneless skinless chicken breasts cut into thin filets
- Juice of 1/2 lemon
- Olive oil spray
Rice Meal Prep:
- ½ cup rice or 1.5 cups cauliflower rice
- 1 cup water
- ¼ teaspoon garlic salt
- ½ teaspoon dill
- Juice of 1/2 lemon
Simple Tzatziki Sauce:
- 1 cup 0% Greek Yogurt
- 1 teaspoon dill
- ⅓ English cucumber chopped
- ¼ teaspoon garlic salt
Greek Veggies for Meal Prep:
- ⅔ large English cucumber chopped
- 1 pint cherry tomatoes halved
Optional Toppings:
- 3 tablespoon Kalamata olives
- ¼ cup sliced red onion
- 3 tablespoons feta cheese
Instructions
Make the Greek Chicken:
- Sprinkle the garlic salt all over the chicken.
- Preheat a large skillet over medium heat and lightly spray with olive oil.
- Add the chicken to the hot skillet and cook for 5-8 minutes each side, until cooked though.
- Squeeze 1/2 lemon over the chicken, and move to a plate to cool, then chop.
Make the Greek Rice:
- In a small pot, or rice cooker, add rice and water.
- Bring to a boil on high heat. Lower heat to low, cover and cook until the water soaks into the rice, about 30 minutes. (Or follow rice cooker directions)
- Remove the pot from the heat and add the rice to a medium bowl. (If using Cauliflower rice, skip to this step)
- Add the garlic salt, dill and juice of 1/2 lemon to the bowl and toss together.
Make the Easy Tzatziki Sauce:
- Add the greek yogurt, dill, chopped cucumber, and garlic salt to a bowl.
- Mix well and set aside until you’re ready to put the easy chicken meal prep together.
Put Meal Prep Lunches Together:
- Lay your meal prep containers out in a line.
- Divide the rice into each container.
- Then add the chicken to each container.
- And finally add in the chopped veggies. (If you plan to heat this, you can add the veggies and tzatziki to a small container to keep separate).
- Add in any desired toppings and store in the fridge for up to 5 days.
