- 1 cup parsley
- 1 red chili pepper
- 4 garlic cloves
- ½ teaspoon oregano
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 teaspoon paprika
- ¼ cup red wine vinegar
- Juice on 1/2 lime

Low Calorie Chimichurri Sauce
Equipment
- blender or food processor
Ingredients
- 1 cup parsley leaves packed
- 1 red chili pepper deseeded
- 4 garlic cloves
- ½ teaspoon oregano
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 teaspoon paprika
- ¼ cup red wine vinegar
- Juice on 1/2 lime
Instructions
- Add the parsley, chili, garlic cloves, oregano, salt, pepper and paprika to a high speed blender or food processor.
- Pulse until it’s as smooth as you can get it, then add in the red wine vinegar and the lime juice and pulse a bit more until you reach the desired consistency. If needed, add in water one tablespoon at a time to reach desired consistency.
- Transfer to a medium bowl, cover and let rest in the fridge for 1-24 hours to marinate, the longer the better.
