Ingredients for Low Calorie Cucumber Sandwiches
As noted above, I have found a few ways to lower the calories and the carbs in these high tea sandwiches. here are a few tips and tricks to make the recipe below even lower in calories and carbs.
Carb and Calorie Saving Tips:
- Swap out the bread for either very thin sliced bread (found in most stores with the rest of the bread) or with a zero carb keto bread this will save both calories and carbs!
- Use fat free cream cheese or Neufchâtel cheese (found with the cream cheese) to save calories.
- Swap out the cream cheese for avocado, great tip to make these vegan sandwiches.
- Serve with fruit and veggie sticks, so you can have just one finger sandwich and fill up on the low calorie stuff.
Cucumber Sandwich Ingredients:
- Sliced Soft White Bread – extra thin, wheat, and keto bread also works.
- Fat Free Cream Cheese – regular, low fat, and Neufchâtel cheese also work.
- Lemon Juice – fresh is best, and if you’re having high tea you will need it anyway.
- Salt and Pepper – you can skip the salt if your diet requires it.
- English Cucumber – English cucumbers have very small seeds, and make the best sandwiches.
- Chives and Dill – these are optional, but add a ton of flavor (and are zero calories!)
Optional Add-Ins:
- Radishes
- Avocado
- Smoked salmon
- Capers
How to Make Low Calorie Cucumber Tea Sandwiches
Some recipes will have you smear the cream cheese, then top with lemon juice and herbs. But I find that the cream cheese is easier to spread on soft bread when it’s been thinned out with the lemon juice.
I also find that it tastes much better and looks fancier (see photo below).
How to Make Low Calorie Cucumber Sandwiches:
- In a small bowl combine the cream cheese, lemon juice, salt, pepper, chives, and dill. Mix well and set aside.
- Lay 2 slices of bread on a clean surface, and smear 1/2 of the cream cheese mixture over one side of each.
- Top one slice of bread with sliced cucumber (and any other optional add-ins) and then cover the cucumber with the other slice of bread.
- Cut off the crusts (unless you like them) then cut in half on a diagonal, turn and again on a diagonal so you have 4 triangle finger sandwiches.
- Serve right away, or place in the fridge to serve later. Will hold for 24 hours in the fridge.

Ingredients
- 2 sliced soft white bread
- 1 tablespoon fat free cream cheese at room temperature
- ½ teaspoon lemon juice
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- ½ teaspoon chopped chives optional
- ½ teaspoon chopped dill optional
- 1 English cucumber thinly sliced
Optional Add-Ins:
- 2 radishes thinly sliced
- ¼ avocado mashed
- 1 slice smoked salmon halved
- 1 teaspoon capers chopped
Instructions

These sandwiches are most often served as snacks, one finger sandwich per person. So that is how I figured out the nutrition below. It is based off 1 finger sandwich and off the original recipe without any add-ins. And because I can’t tell the database that I have cut off the crusts, the nutrition below is based off the recipe leaving the crusts on.
If you wanted to have the entire recipe (the whole sandwich before cutting into mini sandwiches) or all 4 finger sandwiches it would be 241 calories.
If you want to lower the calories and carbs more, you can choose extra thin bread, or protein based bread (this one has zero carbs!).
