Healthy Creamed Corn Meal Prep and Storage
Meal Prep: I love to meal prep this healthy recipe! I make it ahead of time (often for dinner- then store the leftovers as meal prep dinners) and move to either individual meal prep containers, or family sized containers.
Storage: Will hold for 5 days in the fridge or 1 month in the freezer.
Reheating: Reheat in the microwave for 1-2 minutes.

Low Calorie Creamed Corn
Ingredients
- 5 ears corn shucked and cleaned
- 1 teaspoon butter
- 1 ½ cups unsweetened almond milk
- 1 ½ tablespoons cornstarch
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1-2 teaspoons sugar (optional- see notes)
Instructions
- Cut the kernels from cobs into a large bowl.
- Into a separate bowl scrape the cobs with the back of a kitchen knife to remove as much of the “milk” as possible.
- To a large skillet add the butter and corn kernels. Cook for 5 minutes, stirring occasionally.
- To the bowl with the corn “milk” add the almond milk and corn starch and whisk together
- To the skillet add the milk mixture and cook for an additional 5 minutes.
- Taste and if needed, add 1-2 teaspoons of sugar, then remove from the heat and serve hot.
