Low Calorie Cilantro Lime Cauliflower Rice
Ingredients
- Olive oil spray
- 1 small yellow onion minced
- 2 garlic cloves minced
- 3 cups riced cauliflower frozen or see below for fresh
- Juice of 2 limes
- ½ cup fresh cilantro leaves chopped
- ½ teaspoon salt
Instructions
- Heat a large skillet over medium heat.
- Spray with olive oil and add the onions. Sauté for 5 minutes.
- Add in the garlic and cook for an additional 1 minute.
- Add the cauliflower rice to the skillet and mix well. Turn the heat up to medium-high and cook for 5 minutes to cook off some of the moisture.
- Lower the heat to low heat, and add in the lime juice, cilantro, and salt. Mix well, and cook for an additional 2 minute before serving.

How to Make Cauliflower Rice:
- Remove any greens from your cauliflower head.
- Wash and dry cauliflower
- Cheese Grater Method: Cut the cauliflower into large chunks and use the medium-sized holes, to grate.
- Food Processor Method: Cut into small pieces and use the grater attachment to grate the cauliflower.
- Knife Method: Use a large knife to finely chop the cauliflower into smaller rice-sized pieces.
- Blender Method: Add cauliflower florets to a blender and pulse until small pieces form, about 15 to 60 seconds, scraping the cauliflower down as needed.
How to Cook Cauliflower Rice:
- Heat a large pan over medium heat.
- Add the cauliflower rice in a single layer.
- Stir and cook for 3-5 minutes, until the rice becomes tender and the excess liquid cooks off.
