Ingredients You’ll Need:

  • 1 (8-oz) box Chickpea Penne Pasta
  • ¼ cup Low Calorie Pesto (or store-bought)
  • 3 teaspoons balsamic vinegar
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • 15 cherry tomates
  • 6 oz mini mozzarella balls (or cubed mozzarella)
  • ½ cup fresh basil

Healthy Caprese Pasta Salad Meal Prep and Storage

Meal Prep: I love to meal prep this healthy recipe! I make it ahead of time (often for dinner- then store the leftovers as meal prep dinners) and move to either individual meal prep containers, or family sized containers.
Storage: Will hold for 5 days in the fridge or 1 month in the freezer.
Reheating: Reheat in the microwave for 1-2 minutes.

This Low Calorie High Protein Caprese Pasta Salad is just 106 calories and has 8.9g of protein per 1/2 cup. Perfect for a snack or side dish!
I like to use cherry tomatoes to make this healthy caprese pasta salad, but any tomatoes will work as long as they are cut into bite sized pieces.
Special Tip: I used protein pasta, but you can use any pasta you like. Regular pasta will change the nutrition, but it will still be very yummy!

Ingredients
 
 

  • 1 (8-oz) box Chickpea Penne Pasta
  • ¼ cup Low Calorie Pesto or store-bought
  • 3 teaspoons balsamic vinegar
  • ½ teaspoon salt
  • teaspoon pepper
  • 15 cherry tomates quartered
  • 6 oz mini mozzarella balls or cubed mozzarella
  • ½ cup fresh basil chopped

Instructions
 

  • Cook the pasta to al dente according to the directions on the package.
  • Drain and add the pasta to a large bowl, add in the pesto, balsamic vinegar, slat and pepper.
  • Toss well to combine and then leave to cool to room temperature for 10-15 minutes.
  • Add in the tomatoes, mozzarella and the basil.
  • Toss again to combine ingredients, then cover and chill in the fridge for 2-4 hours.
  • Serve cold.
