Low Calorie Chocolate Covered Popcorn
This Low Calorie Chocolate Covered Popcorn is juts 100 calories per cup!Special Tip: I did supply you with stovetop instructions, but you can save more calories by using air popped popcorn!
Ingredients
- 2 tablespoons coconut oil divided
- ½ cup popcorn kernels divided
- ¼ cup semisweet chocolate chips
- Salt to taste
Instructions
- In a large, heavy-bottomed saucepan or dutch oven over medium heat, combine 1 tablespoon of the coconut oil and 2 popcorn kernels. Cover the pot and wait for the kernels to pop, this may take a few minutes.
- Once the 2 kernels pop, turn off the heat, remove the pot from the burner and pour in the remaining popcorn kernels.
- Cover the pot again, and give the pot a little shake to evenly layer the kernels. Let the pot rest for 1 minute to lightly cool the oil. Then turn the heat back up to medium heat and put the pot back onto the burner.
- Cook the popcorn, gently shaking it back and forth to cook the kernels evenly. Once the kernels start popping, vent the lid slightly to release steam.
- Continue cooking until the popping sound slows to about one pop per every few seconds.
- Remove the lid and pour the popcorn into 2 rimmed baking sheets.
- Add the remaining 1 tablespoon coconut oil, and the chocolate chips to a microwave safe bowl. Microwave in 30 second increments, mixing between each, until the chocolate is completely melted.
- Drizzle the chocolate over the popcorn, and if desired sprinkle over a little salt.
- Place in the fridge for 10 minutes to set the chocolate, then move to bowls and enjoy.
