Healthy Butternut Squash Fritter Meal Prep and Storage
Meal Prep – Cook the fritters as directed and drain, allow to cool completely then move to a container or freezer bag.
Frozen Storage – Will hold in the freezer for 1 month
Refrigerated Storage – Will hold in the refrigerator for 5 days.
Reheating – Add individual fritters to a dry pan and cook on medium-low until heated through. Or add multiple to a baking sheet and add to an oven at 300 degrees. Cook for 10-15 minutes until warmed through.

These Low Calorie Butternut Squash Fritters are just 57 calories, and they are packed with flavor. I know you'll love these healthy fritters!Special Tip: If you re a fan of garlic, you can add 1-2 minced garlic cloves to the mixture.
Ingredients
- Olive Oil Spray
- 5 cups shredded butternut squash
- 2 large eggs lightly beaten
- 3 green onions chopped
- ⅔ cup all-purpose flour
- 1 tablespoon minced fresh sage
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Preheat a skillet over medium high heat. And line a plate with paper towels.
- Spray the hot pan with olive oil.
- Use a box grater to grate butternut squash into a large bowl.
- Add the egg, green onions, flour, salt and pepper to the bowl and stir to combine.
- Use a 1/4 cup measuring cup to scoop the mixture. Roll in wet hands into balls.
- Drop each ball individually into the hot pan, and use a spatula to press down into 1/4 inch patties.
- Cook for 2-3 minutes until browned on one side, flip and brown on the other side.
- Move each fritter to the paper towel lined plate as they are done cooking. Spray the pan lightly between cooking fritters as needed.
- Serve hot with sour cream or greek yogurt.
