lightly beaten

green onions

minced fresh sage

Instructions
Preheat a skillet over medium high heat. And line a plate with paper towels.
Spray the hot pan with olive oil.
Use a box grater to grate butternut squash into a large bowl.
Add the egg, green onions, flour, salt and pepper to the bowl and stir to combine.
Use a 1/4 cup measuring cup to scoop the mixture. Roll in wet hands into balls.
Drop each ball individually into the hot pan, and use a spatula to press down into 1/4 inch patties.
Cook for 2-3 minutes until browned on one side, flip and brown on the other side.
Move each fritter to the paper towel lined plate as they are done cooking. Spray the pan lightly between cooking fritters as needed.
Serve hot with sour cream or greek yogurt.
