This Low Calorie Brie and Sweet Potato Appetizer is easy and impressive! At just 55 calories easy, and only 4 ingredients (if you don’t count salt and pepper) these are sure to impress your guests without over working you.
Ingredients You’ll Need:
- 3 large sweet potatoes
- Olive oil spray
- 8 oz brie wheel
- ¼ cup dried cranberries
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon fresh thyme (optional)
- ¼ cup chopped walnuts (optional)

Healthy Sweet Potato Appetizer Meal Prep and Storage
Meal Prep & Make Ahead – Bake the sweet potato rounds as directed. Top with remaining ingredients and cover with foil.
Frozen Leftovers – Best if not frozen, but leftovers will hold in the fridge for 2 weeks.
Refrigerated Leftovers – Will hold in the refrigerator for 4 days.
Reheating – Add the baking sheet covered with foil back to the oven and bake for 5 minutes until warm. Can also serve cold.

Low Calorie Sweet Potato Appetizer

Ingredients
- 3 large sweet potatoes
- Olive oil spray
- 8 oz brie wheel
- ¼ cup dried cranberries
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon fresh thyme optional
- ¼ cup chopped walnuts (optional)
Instructions
- Preheat the oven to 450 degrees and line 2 large baking sheets with parchment paper.
- Cut the sweet potatoes into 1/4 inch rounds (about 8 rounds per sweet potato) and place on the baking sheets in a single layer as you work.
- Spray the sweet potatoes with olive oil.
- Bake the sweet potato rounds in the oven for 10 minutes. Flip and bake an additional 10 minutes. (20 minutes total)
- Meanwhile, slice the brie in half, then cut those halves in half (so you have 4 large wedges). Cut each of the 4 wedges into 6 slices (this will give you 24 small pieces of brie).
- Remove the potato bites from the oven and immediately add a slice of brie to each so it melts (you can also add back to the hot oven for 2-3 minutes if you are in a rush.)
- Top each with cranberries, salt and pepper and if you like, a little thyme and walnuts.
- Serve hot, cold, room temperature. These are great anyway you serve them!
