  • ¼ cup water
  • 1 teaspoon salt

  • 1 large red onion peeled and sliced very thin

Perfect for tacos, soups, salads, and burgers, these Mexican pickled onions are a great topping that adds lots of flavor to any dish.
Special Tip: This is a vegan recipe thanks to the zero-calorie sweetener, or maple syrup. But if you prefer to use honey, that will work as well.

Ingredients
 
 

Optional Pickled Onion Add-Ins:

  • 1 jalapeno sliced thin
  • 1 clove garlic sliced thin
  • 1 bay leaf
  • 1 sprig fresh thyme
  • ¼ teaspoon fresh ground pepper

Instructions
 

  • To a small glass bowl or small sauce pan combine the vinegar, water, salt and sweetener.
  • Microwave for 1-2 minutes until hot, or bring to a simmer over medium heat.
  • Meanwhile, slice the onions and add to a mason jar or bowl. (Also add in any optional add-ins)
  • Pour the hot pickling mixture over the onions, making sure they are completely submerged.
  • Marinate for 30 minutes.
  • Serve immediately, or cover and store in the fridge for up to 2 weeks.
