Ingredients You’ll Need:
- ¾ cup apple cider vinegar
- ¼ cup water
- 1 teaspoon salt
- 2 tablespoons All-Natural Zero Calorie Sweetener (see recipe card)
- 1 large red onion peeled and sliced very thin

Low Calorie Red Pickled Onions
Ingredients
- ¾ cup apple cider vinegar
- ¼ cup water
- 1 teaspoon salt
- 2 tablespoons All-Natural Zero Calorie Sweetener or maple syrup
- 1 large red onion peeled and sliced very thin
Optional Pickled Onion Add-Ins:
- 1 jalapeno sliced thin
- 1 clove garlic sliced thin
- 1 bay leaf
- 1 sprig fresh thyme
- ¼ teaspoon fresh ground pepper
Instructions
- To a small glass bowl or small sauce pan combine the vinegar, water, salt and sweetener.
- Microwave for 1-2 minutes until hot, or bring to a simmer over medium heat.
- Meanwhile, slice the onions and add to a mason jar or bowl. (Also add in any optional add-ins)
- Pour the hot pickling mixture over the onions, making sure they are completely submerged.
- Marinate for 30 minutes.
- Serve immediately, or cover and store in the fridge for up to 2 weeks.
