Instructions
Preheat a skillet over medium low heat.
Lightly spray with olive oil, then add the eggs and the taco seasoning.
Cook for 3 minutes, then scrabble with a spatula and cook until the eggs are cooked through. Remove from the heat.
Meanwhile, add the pinto beans and salsa to a medium bowl. Use a fork to gently mash the beans, and mix the salsa in.
Steam the tortillas according to the package (wrap in wet paper towels and microwave for 20 seconds) until soft and pliable.
Spread the bean mixture over one side of each tortilla.
Top with taco flavored eggs and desired toppings.
