Strawberry Salad with Chicken:

baby spinach

strawberries
sliced

cup
chopped walnuts

precooked shredded chicken

crumbled blue cheese
Homemade Balsamic Vinaigrette:

balsamic vinegar

Dijon mustard

honey or maple syrup

vegetable broth

Instructions
Make the balsamic vinaigrette ahead of time, combine all the ingredients in bowl and whisk. Set aside to marinate.
Add the baby spinach, 1/2 the strawberries, 1/2 the walnuts, and the chicken to a large bowl. Toss to combine.
Pour the balsamic vinaigrette over the salad and toss well
Top the salad with remaining strawberries, walnuts, chicken and the cheese and serve.
Note- You can also plate the 4 servings, then top them with the remaining ingredients.
