This Low Calorie Whole Roasted Cauliflower is just 12 calories and comes with 5 different seasonings and sauces to roast it in!The nutrition is based off the cauliflower and olive oil spray, the seasonings have their own recipe cards and nutrition labels. But I assure you they won't add many calories, if any at all.Special Tip: If you don't have olive oil spray you can rub the cauliflower head with 1 teaspoon of olive oil.
Trim the stem so that there is none sticking out on the bottom (but do not core the cauliflower head otherwise it won't hold together). Remove any leaves from cauliflower head.
Spray the cauliflower all over with olive oil.
Sprinkle all over with your desired seasoning (if using a sauce rub well into the cauliflower), then add the cauliflower to a 9x9 baking dish.
Cover the dish with foil and roast for 30 minutes with the foil on.
Remove the foil and continue to roast for an additional 45 minutes until golden brown and soft.
Remove from oven and cool for 8-10 minutes before slicing and serving hot.
