1jalapeñoseeds and ribs removed, minced 2 garlic cloves, minced
¼cupcanned diced mild green chiles
1tablespoonground cumin
1½teaspoonsground coriander
1½teaspoonschili powder
Juice of 1 lime
4cups1 quart low-sodium chicken broth
2 (4-ounce) boneless, skinless chicken breasts
115.5-ounce can white beans, drained and rinsed
⅓cupchopped fresh cilantro
Optional Toppings:
Shredded cheddar cheese
0% Greek yogurtin place of sour cream
Sliced green onions
Tortilla chips
Diced avocado
Instructions
Slow Cooker White Chicken Chili
In a slow cooker, combine the onion, jalapeño, garlic, green chiles, cumin, coriander, chili powder, lime juice, broth, and chicken. Cover and cook on high for 3 hours or on low for 5 hours.
When the chicken is almost done, put the beans in a medium bowl and use a fork to gently mash a little more than half of them. Set aside.
Remove the chicken breasts and shred them. Return the chicken to the slow cooker, add the beans (mashed and unmashed) and cook, uncovered, for
10 minutes to heat everything through.
Top with the cilantro and serve with toppings of your choosing.
Instant Pot White Chicken Chili
Sauté the onion, jalapeño, garlic, green chiles, and chicken on medium in the Instant Pot, add the broth, and scrape very well so you don’t get a “burn” message.
Add the remaining ingredients (except the cilantro). Cover the Instant Pot and cook on high pressure for 20 minutes.
Quick-release the pressure, remove the chicken and shred it, then return it to the pot and add the beans. Sauté on low for 5 minutes.
Top with the cilantro and serve with toppings of your choosing.
