This Low Calorie Pull Apart Bread is just 71 calories (based off the Rosemary Garlic flavor shown) and is so yummy! You can easily make this lower in sodium by omitting the salt all together. I like to add the zest of one lemon in its place. This is especially yummy in the Rosemary Garlic and the Everything Bagel flavors. Special Tip: Make sure your yeast is fresh, if it isn't, your dough won't rise. Also, leave your dough to rise in a warm spot.
In a standing mixer (or a large bowl), whisk together the water, and yeast. Let it sit for 5-10 minutes until it becomes foamy.
Add the salt, and 1/2 cup of flour at a time mixing with the kneading hook, making sure it is incorporated before adding more flour. (If using a bowl and spatula, work 1/2 cup of flour in at a time until you have a sticky dough.)
If using a standing mixer, kneed the dough for 2-3 minutes on medium speed until you have a smooth dough. If you don’t have a standing mixer, add some flour to a clean countertop and kneed the dough by hand for 3-5 minutes until you have an elastic like dough.
Leave (or add back) the dough in the mixer bowl, and cover with plastic wrap and then a kitchen towel. Leave to rise for 1 hour
(Special Tip: Leave the dough to rise in a warm and draft free spot of your home).
Spray a loaf pan with olive oil spray and preheat the oven to 350 degrees.
Uncover the dough, punch down and give a quick 1 minute kneed, then move to a clean floured surface. Cut into 12 portions.
Roll each portion into balls and press down to small tortilla sized rounds.
Add filling to each round and fold in half (like a taco) place each into the prepared baking sheet as you work, with the round portion on top.
Cover with a damp kitchen towel to rise for one hour (again, ideally in a warm place).
Bake at 350 degrees for 45-50 minutes or until golden brown and baked through.
Remove from the oven and cool in the loaf pan 10 minutes to finish cooking, then move to a wired rack to cool.
