Instead we add it along with the honey just before serving. The honey is optional, and you could make this a vegan lemon and ginger water by omitting the honey, or by using agave in its place.
Lavender - fresh or dried lavender is great in this drinkand can help ease tummy troubles too. Add in with the ginger to steep in the water and infuse it with flavor.
Mint - naturally reducing bloatmint is a great add-in for this drink. Get fresh mint leaves for best results (and flavor). Add the mint in with the ginger and steep in the water and infuse it with flavor.
Lime - if you really love citrusadd in juice of 1/2 a lime to boost flavor and (metabolism boosting) vitamin C.
Cucumber - especially great in the cold version of this drinkcucumber naturally reduces tummy bloat! I like to add this at the very end before serving.
Berries - add a boost of colorand metabolism boosting vitamin C with 1/4 cup berries (your favorite or a mixture) to the water after boiling. Let steep for 10 minutes and then add in the lemon juice.

Peel and thinly slice the ginger, and add to a small sauce pan.
Add the water, place on a burner over medium heat.
Simmer for 5 minutes, remove and discard the ginger.
Remove from heat, add in the lemon juice and honey and mix until the honey is dissolved.
Pour the lemon ginger tea into a mug and serve hot.
