These Low Calorie Baked Meatballs are just 131 calories each and packed with 14.6g of protein. Try this healthy baked meatball casserole as a main course over pasta, spinach (my favorite way to serve it) or over spaghetti squash. Pour ¾ of the marinara sauce on the bottom of a 9x13 inch casserole dish.
Add the turkey, egg, parmesan cheese, breadcrumbs, salt and pepper to a large bowl.
Add in 1/4 cup marinara sauce (it's ok if it's cold).
Mix with your hands until just combined, over-mixing will make tough meatballs.
With wet hands (to avoid sticking) divide the meatballs into 12 portions, then roll each in your hands until you have a perfect ball. Place in the casserole dish and keep working until you have 12 meatballs.
Add the meatballs. Spoon remaining sauce over the top.
Cover with foil and bake for 30 minutes.
Uncover and top with cheese, and bake 15 more minutes.
Broil for additional 1-2 minutes until the cheese is melted.
