Preheat oven to 350 degrees F and grease a muffin pan, or add muffin liners.
In a large bowl, combine flour, baking soda and salt.
In a separate bowl, mix together the coconut oil and maple syrup. Mix in the eggs, vanilla and mashed bananas.
Stir banana mixture into flour mixture until just combined. Pour batter into prepared muffin tins.
Bake for 20 to 25 minutes, until a toothpick inserted into center of the muffin comes out clean. Let the banana muffins cool in pan for 10 minutes, then turn out onto a wire rack.
