¼cupchopped cucumberabout 1/4 of an average cucumber
½cupchopped romaine lettuceabout 2 large leaves
¼cupdiced tomatoabout 1/2 a medium tomato
2tablespoonskalamata olivessliced (optional)
Instructions
Marinate the chicken:
Add the chicken to a freezer bag or bowl.
Zest the lemon over the chicken, then juice the lemon and add all of the juice to the chicken.
Add in the garlic powder, dill, salt and pepper. If using a bag, close and squish together, if using a bowl, coat the chicken with the marinade and cover.
Marinade for 1-12 hours in the fridge.
Make the Tzatziki Sauce:
Add the yogurt, garlic powder, dill and salt to a medium bowl.
Use a cheese grater to shred the cucumber, and add to the yogurt.
Mix well, cover and set aside.
Make the Gyro Wrap:
Heat a skillet over medium heat. Spray with olive oil and then add in the bell pepper and onion.
Add in the chicken breast, and reserve the marinade.
Cook for 8 minutes, flip the chicken and mix the vegetables, and cook for an additional 8-10 minutes until the chicken is cooked through with no pink in the center.
Remove the chicken from the skillet and slice thin, then add back to the skillet along with the reserved marinade.
Cook for an additional 5 minutes, then remove from the heat.
To each flat bread, spread over 1/8 cup of the Tzatziki sauce, add 1/2 of the chicken. Top with chopped cucumber, lettuce, tomato and olives.
Serve immediately, with more Tzatziki sauce on the side or drizzled over the top.
