Instructions
Make the Greek Chicken:
Sprinkle the garlic salt all over the chicken.
Preheat a large skillet over medium heat and lightly spray with olive oil.
Add the chicken to the hot skillet and cook for 5-8 minutes each side, until cooked though.
Squeeze 1/2 lemon over the chicken, and move to a plate to cool, then chop.
Make the Greek Rice:
In a small pot, or rice cooker, add rice and water.
Bring to a boil on high heat. Lower heat to low, cover and cook until the water soaks into the rice, about 30 minutes. (Or follow rice cooker directions)
Remove the pot from the heat and add the rice to a medium bowl. (If using Cauliflower rice, skip to this step)
Add the garlic salt, dill and juice of 1/2 lemon to the bowl and toss together.
Make the Easy Tzatziki Sauce:
Add the greek yogurt, dill, chopped cucumber, and garlic salt to a bowl.
Mix well and set aside until you're ready to put the easy chicken meal prep together.
Put Meal Prep Lunches Together:
Lay your meal prep containers out in a line.
Divide the rice into each container.
Then add the chicken to each container.
And finally add in the chopped veggies. (If you plan to heat this, you can add the veggies and tzatziki to a small container to keep separate).
Add in any desired toppings and store in the fridge for up to 5 days.
