Prep the peppers, cut off stems, and add to the blender or food processor. If you don't want super spicy sauce, remove seeds and discard before adding to blender.
Add the remaining ingredients to the blender or food processor, and blend until smooth.
Add the sauce into a sauce pan over medium heat.
Simmer for 10-15 minutes (stir often to avoid burning) until thick.
Remove from the heat and let cool to room temperature.
Strain the sauce through a fine mesh strainer, then transfer to glass jars and store in the refrigerator for up to 2 weeks (you can also move to freezer bags and freeze leftovers for a later date).
Special Tips:
Before you get started, put on rubber gloves. If you do not have any, be very careful handling the peppers, and make sure to triple wash your hands before you touch anything after handling.
Throw any seeds and stems into the trash, NOT the garbage disposal. Otherwise when you run the disposal you could essentially mace yourself.
Use COLD water to rinse out blender, sauce pan, mesh strainer. Hot water will create a spicy steam, and is (again) like macing yourself!
