Preheat oven to 450 degrees and lightly spray a large, rimmed baking sheet or 9x13 casserole dish with olive oil.
Add the chicken breasts to the prepared baking sheet. Smear the top of each chicken breast with 1/2 to 1 teaspoon of dijon mustard.
Top each with prosciutto, then cheese, then Panko bread crumbs, and finally the chopped thyme. Lightly spray the tops with olive oil and move to the oven.
Bake for 20-25 minutes until the juices run clear and the internal temp is 165 degrees.
