The Best Baked Potatoes:
2
medium russet potatoes
Olive Oil Spray
1/2
teaspoon
salt
Healthy Baked Potato Toppings (optional):
Greek Yogurt
in place of sour cream
Chives
Green onions
Cooked and crumbled turkey bacon
Sharp cheddar cheese
use sparingly
Salsa or hot sauce
Jalapeños
pickled or fresh
Instructions
Preheat oven to 450 degrees. Line a rimmed baking sheet with foil.
Pierce the potatoes all over with a fork, and place on the baking sheet.
Bake for 30 minutes.
Remove from the oven and spray with olive oil. Sprinkle with salt and add back to the hot oven.
Bake for an additional 20-30 minutes, until soft.
Remove from the oven and serve with desired toppings. Or cool and use in meal prepping
