This healthier version of banana bread uses coconut oil and maple syrup in place of butter and sugar. If you prefer to use the more traditional ingredients, feel free to swap them in... it will be the same measurements (1/3 cup butter instead of 1/3 cup coconut oil).Special Tip: I have supplied modifications to make this low calorie banana bread vegan and or gluten-free.
