Pre-heat oven to 350, oil (cooking spray is fine) a loaf pan and a rimmed baking sheet.
Put oil in pan, heat on med-high and add the onions cooking for 5-10 min until soft. Toss in the garlic and cook for another 5 min, remove from pan to a plate to cool. While the onions and garlic cool put everything else in a large bowl, hold the marinara and Mozzarella back though. Once the onion mix is cool add to the bowl and mix with your hands until just combined, don’t over mix it will make the meat tough. Mold into an loaf pan, top with marinara sauce. Set aside while you get on with the potatoes.
Add the meat loaf to the oven for 50-60 minutes, after about an hour take out the meatloaf, top with mozzarella and put back into oven and broil at 400 for 3-5 min, watch so it doesn't burn.
Take out meatloaf and let it rest for 10 minutes. Time to plate and serve.
