Preheat the oven to 400 degrees, and line a baking sheet with parchment paper.
In a mixing bowl, add the flour, yogurt, garlic salt and Italian seasonings and mix until combined.
Form into a ball of dough.
Lay a piece of parchment paper out on the countertop.
Place the dough in the center of the parchment paper. Top the dough with a little flour and a second piece of parchment paper.
Use a rolling pin to roll it out to a large rectangle, 1/4 inch thick.
Remove the top layer of parchment paper and use a pizza cutter or knife to slice 8 pieces of dough into thick strips.
Sprinkle the cheese over the dough strips, then the pepperoni, leaving room on the top and bottom.
Working from the bottom, roll up each pizza roll and place it cut side down on the prepared baking sheet.
Transfer the pizza rolls to the oven and bake for 15-20 minutes, until the crust is cooked through and golden, and the cheese is melted.
Remove from the oven, sprinkle the tops with parmesan and red pepper flaked (if using) and allow to cool on the baking sheet for 5 minutes, then serve with marinara sauce and enjoy!
